Pear and vanilla flan with no pastry

For 4 people


2 pears

3 eggs

½ liter / 16 fl oz of semi-skimmed milk

1 vanilla pod

50g / 1 ¾ oz of caster sugar or fructose

50g / 1 ¾ oz of cornstarch


Peel the pears, cut them into wedges and line the bottom of a mold with the pieces.

Pre-heat your oven to gas mark 6  / 180°C / 350°F.

Beat the eggs briskly to a foamy consistency.

Cut the vanilla pod in half, scrape the contents with a knife and add along with the sugar and cornstarch.

Pour the mixture onto the pears, place the mold in the oven and bake for 40 minutes in a bain-marie.

Leave the flan to cool down before unmolding.
